Faux Fudgey Truffles

Description
Desserts shouldn’t make you feel guilty. They may be sweeter than the rest of your day’s meals, but hey — that’s why they call it dessert.
What we don’t want is a spike in sugar followed by a crash. These raw vegan truffles are nutritionally balanced, delivering sustained energy and good vibes thanks to protein and healthy fats.
Whether you enjoy them as dessert, a weekend breakfast treat, or an afternoon snack, these little fudgey bites have you covered.
Ingredients
- 2 cups almonds or walnuts (pre-soaked 8 hours)
- 2 tbsp hemp seeds
- 2 tbsp coconut oil
- 2 tbsp raw cacao
- 1 tsp chia seeds
- 1–2 tbsp almond butter
- 2 tbsp goji berries (pre-soaked 10 min)
- 2 tbsp black currants
- 2 tbsp maple syrup, pinch stevia, or 1–2 tbsp xylitol
- 2 tbsp shredded coconut
- 1/4 tsp ground cinnamon
- 1/4 tsp vanilla
- 1/4 tsp cardamom
- 1/4 tsp fennel
- Pinch sea salt
- Pinch cayenne
Instructions
Step 1
Add rinsed and drained nuts or seeds to a food processor. Pulse until well chopped.
Step 2
Add remaining ingredients and process until well combined. Add a splash of water if mixture is too dry.
Step 3
Transfer mixture to a bowl. Either:
- Chill in the fridge for 5–10 minutes to firm up, then roll into balls.
- OR spread flat in a container and cut into squares.
Garnish with shredded coconut or goji berries for a gourmet touch.
Tips and Techniques
- Swap the sweetener for 1 ripe banana, or 1/2 banana + 1/2 avocado for a whole-food version.
- For low-sugar, use green stevia or xylitol.
- Substitute nuts with seeds (sunflower or pumpkin) for an allergy-friendly version.
- Use carob powder instead of cacao for a stimulant-free option.
